Einstein Bro’s Bagels is an American chain of restaurants specializing in bagels and coffee. The company takes immense pride in its products – especially the bagels, so much so that bakers begin making the bagels at 2 a.m. every morning. Bagel baking continues throughout the day, so every bagel is always fresh out of the oven.
Let’s look into the long and slightly complicated history of this restaurant chain, its current mergers, and trademarks.
Einstein Bro’s Bagels History
In 1995, Boston Market, then known as Boston Chicken, created Einstein Bro’s Bagels in order to market its breakfast foods. The chain changed hands and is now owned by Einstein and Noah Corp., an Einstein Noah Restaurant Group Inc. subsidiary.
Initially, the Einstein and Noah Bagel Corporation was formed by Boston Chicken Inc. as Progressive Bagel Concepts, Incorporated (PBCI). The corporation was formed in March 1995 after Boston Chicken Inc. purchased four retail bagel chains across the United States.
These companies were Baltimore Bagel (located in San Diego), Offerdahl’s Bagel Gourmet Incorporated (located in Fort Lauderdale), Brackman Brothers Incorporated (located in Salt Lake City), and Bagel & Bagel Incorporated (located in Kansas City).
All of these chains had similar stores, offering original and new bagel flavors to wealthy neighborhoods unfamiliar with bagels and longstanding bagel traditions.
Another acquisition, Noah Bagels, was founded in 1989 by Noah Alper. Alper started the company in Berkeley, California, and Einstein Bro’s Bagels acquired Noah Bagel’s chain of 38 stores in 1996 for $100 million.
New World Coffee, which would attempt to make a hostile takeover of Einstein Bro’s before eventually purchasing the company out of bankruptcy, is a Manhattan-based coffee company. It was founded in the early 90s by an investment banker, Ramin Kamfar, who left his finance career to start a coffee shop.
New World Coffee made a habit out of purchasing bankrupt coffee shops. In 1998, it bought Manhattan Bagel out of bankruptcy and a year later it purchased the 89-store, Washington DC-based Chesapeake Bagel Bakery. Manhattan Bagel, now operating under New World Coffee, had about 350 locations when it was purchased.
After loaning too much money to its franchisees, Einstein Bro’s Bagels would file for bankruptcy in 2000. Soon New World Coffee would buy Einstein Bro’s Bagels out of bankruptcy for $190 million.
The revived Einstein Noah Restaurant Group was then acquired in 2014 by BDT Capital Partners and JAB Holding Company.

Einstein Bro’s Bagels Merger with Panera Bread and Caribou Coffee
On August 5, 2021, Einstein Bro’s Bagels announced a merger with Panera Bread and Caribou Coffee to form a fast-casual powerhouse company called Panera Brands.
The new powerhouse boasts 4,000 locations and 110,000 employees spread across ten countries. Before their merger, the three brands operated independently under JAB Holding Co., a Luxembourg-based corporation.
After the merger, Niren Chaudhary, Panera Bread’s CEO, was named the group CEO of Panera Brands. He will continue serving as the CEO of Panera Bread.
Per the merger’s agreement, the three brands would still maintain autonomy, albeit reporting to Niren Chaudhary as the head of the larger Panera Brands. Therefore, Jose Alberto Duenas, Einstein Bro’s Bagel’s CEO, and John Butcher, Caribou Coffee’s CEO, would still run their respective companies but report to Niren on larger brand matters.
The merger was made as a strategic move to leverage each company’s expertise and services to create a powerful fast-casual platform that will accelerate growth for the three companies.
Panera Bread operates over 2,100 bakery-cafes. The company pivoted during the COVID-19 pandemic to offer better digital and off-premise access to its services.
The pandemic also drove massive innovation within the company. It started offering a delivery service and launched Flatbread Pizza.
The rapid pivoting and quick innovation helped the company regain pre-pandemic profitability, delivering positive sales for May, June, and July 2021.
Caribou Coffee operates 713 stores in 10 countries with a sizeable presence in the U.S.
Einstein Bro’s Bagels has over 1,005 stores consisting of Einstein Bros. Bagels, Noah’s New York Bagels, Bruegger’s Bagels, and Manhattan Bagels.
Einstein Bro’s Bagels Trademarks
Einstein Bro’s Bagels has sought or obtained federal trademark registration for almost 40 trademarks. These include “POWERBAGEL,” “CARIBOU COFFEE & EINSTEIN BROS. BAGELS,” and “BAGELRITO.”
On July 16, 1996, Einstein Bro’s Bagels obtained a federal trademark registration for “POWERBAGEL” which it uses for its bagels and bakery goods.
Einstein Bro’s Bagels also obtained federal trademark registration for “CARIBOU COFFEE & EINSTEIN BROS. BAGELS” on October 22, 2019. The company uses the trademark for its restaurant services, including catering services and office beverage supply services.
In December 2021, Einstein Bro’s Bagels sought a federal trademark registration for “BAGELRITO” and intends to use the trademark for its breakfast sandwiches.
